Super Fluffy Pancakes

I like small, thick pancakes rather than large flat ones, to that end:

1c flour
1/4c sugar
2tsp baking powder
1-2Tbsp soy powder
1c water

It's a nice gloopy batter, I use a skillet set around 350F, cook em until the bubbles in the top are pretty solid, flip 'em and do the other side a little, then eat.

Also pretty darn good cold.
I think trying to quantify music is one of the biggest wastes of time in the world, like discussing your favourite colour or deity or pizza topping. People should realise that and get on with their life.

If you're making pancakes I highly recommend you add some spices to the batter.
I use cinnamon, cardamom, cloves and ginger powder. And obviously, some vanilla.

Dried cranberries + walnuts are a powerful combo as well for pancake batter.

We make banana pancakes for breakfast at least once a week.

Just put an equal number of eggs and bananas in a bowl and rough mash with a fork. Fry into some coconut oil, flip once browned. I tend to cook 4 at a time in a 12" pan, they end up around 4" diameter each as the mix is quite stodgy.

I sometimes mix in cranberries, sultanas, cinnamon before frying.

Really easy and healthy and fun (especially since I have 2 young kids and its a good way to get them to eat a healthy breakfast).

Do you still put syrup on those?
Rebuilding Toyota Tacoma this summer. Haven't decided which truck bumper to get.
